A very simple but super tasty recipe for this classic dish... Did you know that the translation is "Salad from Nice"? Obvious huh?
For 2 people :
2 fresh tuna steaks
1 pack French, trimmed beans
Cucumber, diced.
Mixed leaf salad leaves
8-10 small new potatoes
10/12 cherry vine tomatoes, cut in half
2 free range eggs
Course ground black pepper
Course sea salt
Dill tops (fresh or dried)
Olive oil
Place the 2 eggs in boiling water and boil for 4-5 mins. Once cooked, remove and leave to cool. Bring some water to the boil in a sauce pan. This is for the potatoes. Make sure the water only jut covers the potatoes. I usually cut the spuds in half before boiling. Place the pots into the boiling water and add a good sprinkling of dill tops to the water. Boil for 10 mins, then drain the water. Place back on the heat and add a splash of olive oil and a large pinch of salt. Shake the spuds in the oil and saute for a couple more minutes shaking frequently. Remove from the pan and put off to one side. In the same pan, once the potatoes are removed, place the beans, add some more olive oil and put the lid on the pan. Steam for 4-5 mins shaking frequently.
Heat some olive oil in a griddle pan and heavily pepper the tuna steaks. Cook the tuna for 3-4 mins on each side then remove to cool.
In 2 plates/bowls place the salad leaves, cucumber, beans and tomatoes then place the tuna on the salad. Garnish the steaks with the spuds and tomatoes, cucumber and the boiled eggs(sliced). Drizzle with a splash of olive oil and a pinch of dill and serve.
Easy, quick and delicious...
